For the Pomegranate Poppyseed Dressing
  1. 1/4 cup minced onion
  2. 1/2 cup white wine vinegar
  3. 1/4 cup coconut sugar
  4. 1 teaspoon dry mustard
  5. 1 teaspoon salt
  6. 1/2 cup olive oil
  7. 1/4 cup of grapeseed oil
  8. 1/4 cup of palmagrante juice
  9. 1 1/2 teaspoons poppy seeds
For the Salad
  1. 6 cups fresh baby spinach
  2. 1 pint strawberries, hulled and sliced
  3. 1 avocado, diced (or you can double this to 2 avocados!)
  4. 4 ounces crumbled gorgonzola cheese (if you skip the cheese, it's Paleo)
  5. 1/4 cup sliced almonds, toasted
  6. half a small red onion, thinly sliced
To make the Dressing
  1. Whisk all ingredients together until combined.
To make the Salad
  1. Toss all ingredients together with your desired amount of dressing until combined.
  2. Serve immediately.
