For the Turkey
  1. 2 lbs boneless skinless turkey tenderloins
  2. sea salt to taste
  3. fresh ground pepper to taste
  4. 2 tablespoons of coconut oil
For the Sauce
  1. 1/4 cup oliveoil
  2. 3 tablespoons of lemon juice
  3. 2 tablespoons of minced shallots
  4. 1 clove of garlic minced
  5. 2 teaspoons of organic Dijon mustard
  6. 2 teaspoons chopped fresh thyme
  7. 1/4 teaspoon sea salt
  8. pinch of fresh ground pepper
What you do
  1. Between 2 pieces of wax paper pound the tenders to 1/2 an inch thickness
  2. Cut the tenders in half removing the small white tendon that runs down the middle
  3. Season with salt and pepper
  4. In small brown, whisk together the sauce ingredients until well combined
  5. In a large skillet over medium heat, melt the coconut oil.
  6. Place the tenderloins in the skillet and let them brown, about 4 mins.
  7. Turn the tenders over and brown on the other side (about 3 mins)
  8. Add the sauce to the pan pouring it evenly over the tenders.
  9. Turn down the heat to low and allow to simmer uncovered for 5-8 mins or utile the cause is heated Through and the tenders are no longer ping in the middle.
