What you need
  1. 1 lb. boneless skinless chicken breast
  2. 1/2 cup extra virgin olive oil (or coconut oil if desired)
  3. Juice 1 lemon
  4. 2 tbsp red wine vinegar
  5. 2 cloves garlic, grated
  6. 1/2 tsp dried oregano
  7. 1/2 tsp sea salt
  8. 1/4 tsp black pepper
  9. Kalamata olives
  10. Sliced grape tomatoes
  11. 1/3 cup fresh mint and basil leaves
What you do
  1. Add the olive oil, lemon juice, red wine vinegar, garlic, oregano, salt, and black pepper to a pint sized mason jar.
  2. Screw the lid onto the mason jar and shake for 1-2 minutes or until combined.
  3. Pour the dressing over the chicken in a baking dish or plastic storage bag and marinate for 30 minutes - 1 hour.
  4. Grill chicken until cooked through and optionally, serve topped with kalamata olives, grape tomatoes and the fresh mint and basil leaves
Tips & tricks
  1. Add feta (like the photo) if you're not going doing Paleo!
